  • 32 OREOs (don't remove the creme filling, we're using the whole cookie)
  • 6 tablespoons butter, melted

For The Cheesecake Batter

  • 24 oz cream cheese, softened to room temperature
  • 1 ½ cups sugar
  • 3 eggs
  • 1 ½ teaspoons vanilla extract
  • ¼ cup sour cream
  • ¼ cup all-purpose flour
  • Food coloring in pink and red (gel colors work better than liquid)

How To Make Valentine Swirl Cheesecake Squares

Making The Oreo Crust

  1. Set your oven to 325 F degrees and let it heat up while you make the crust.
  2. Put all 32 OREOs (yes, keep the creme filling in there) into your blender or food processor. Pulse them on high until you've got fine crumbs. It should look like dark cookie sand.
  3. Melt the 6 tablespoons of butter in the microwave. Pour it right into the food processor with the cookie crumbs and pulse a few more times until everything is mixed together. The crumbs should stick together when you press them.
  4. Get a 9x13 pan and line it completely with foil. Make sure the foil goes up and over the sides so you can lift the whole cheesecake out later. Trust me on this one.
  5. Press those buttery OREO crumbs into the bottom of the pan. Use the bottom of a measuring cup to really pack them down evenly.
  6. Bake the crust for 10 minutes. This helps it set up so it won't fall apart when you cut the squares later.
  7. Let it cool on the counter while you make the cheesecake filling.

Preparing The Cheesecake Batter

  1. Keep your oven at 325 F degrees. Move the top rack to the middle position.
  2. Here's a trick I learned from my mom. Put a large cookie sheet on the lower rack and fill it halfway with water. This creates steam in the oven, which helps prevent cracks in your cheesecake.
  3. In a large mixing bowl, beat the cream cheese and sugar together until they're completely smooth. No lumps. This takes about 2 minutes with a hand mixer.
  4. Add the eggs one at a time, mixing after each one. Don't overmix here. Just mix until each egg is incorporated.
  5. Add the vanilla extract, sour cream, and flour. Mix everything until it's smooth and creamy.
  6. Divide the batter equally among three bowls. I actually measure this out because I want the colors to be somewhat even.
  7. Color one bowl pink, one bowl red, and leave one bowl white. Start with just a tiny bit of food coloring. You can always add more, but you can't take it away.

Creating The Swirls

  1. Here's where it gets fun. Spoon each color in random places on top of your cooled crust. Don't overthink this part. Just plop spoonfuls of pink, red, and white all over.
  2. Tap the pan gently on your counter a few times. This helps level out the batter and gets rid of any air bubbles.
  3. Take a butter knife and gently swirl all the colors together. Don't overmix. You want distinct swirls, not a muddy mess. I usually just make a few figure-eight motions through the batter.
  4. Carefully place the pan in the oven, right above that pan of water. Bake for 45 minutes without opening the oven door. I know it's tempting to peek, but don't.
  5. After 45 minutes, check if the center is still jiggly. If it is, check back every 2 to 3 minutes until it's just barely set. The middle should look slightly wobbly but not liquidy.
  6. Take the cheesecake out and let it cool on the counter for about an hour. Then move it to the fridge for at least 6 hours. I usually make these the night before I need them.

Storage And Reheating

These Valentine swirl cheesecake squares keep really well in the fridge. Just cover them with plastic wrap or store them in an airtight container.

They'll stay fresh in the refrigerator for up to 5 days. Honestly, they never last that long at my house, but it's good to know.

If you want to freeze them, you totally can. Wrap individual squares in plastic wrap, then put them all in a freezer bag. They'll keep for up to 2 months. Let them thaw in the fridge overnight before serving.

These are best served cold, straight from the fridge. No reheating needed.

Tips For Perfect Valentine Swirl Cheesecake Squares

  • Let your cream cheese sit out for at least an hour before starting. Room temperature cream cheese mixes way better and you won't get lumps.
  • Don't skip the water bath trick. That pan of water on the lower rack really does help prevent cracks. I learned this the hard way after my first attempt cracked right down the middle.
  • Use gel food coloring if you can find it. The liquid stuff works, but gel colors are more vibrant and won't thin out your batter.
  • When swirling, less is more. I made the mistake of over-swirling my first batch, and the colors got all muddy looking. Just a few gentle swirls is all you need.
  • Line your pan with foil so you can lift the whole thing out before cutting. This makes it SO much easier to get clean squares. Plus, your pan stays clean.

Don't try to thaw them at room temperature. It gets messy and the texture gets weird. Just plan ahead and let them thaw slowly in the fridge.

Ingredients

  • 32 OREOs (don't remove the creme filling)

  9. Beat cream cheese and sugar together until completely smooth, about 2 minutes.
  10. Add eggs one at a time, mixing after each one until incorporated.
  11. Add vanilla extract, sour cream, and flour, mix until smooth and creamy.
  12. Divide batter equally among three bowls.
  13. Color one bowl pink, one bowl red, and leave one bowl white.
  14. Spoon each color randomly on top of cooled crust.
  15. Tap pan gently on counter to level batter and remove air bubbles.
  16. Take butter knife and gently swirl colors together with figure-eight motions.
  17. Place pan in oven above water pan and bake for 45 minutes without opening door.
  18. Check if center is still jiggly, if so check back every 2-3 minutes until barely set.
  19. Let cheesecake cool on counter for about an hour.
  20. Move to fridge for at least 6 hours before cutting and serving.
  21. Add Valentine sprinkles and sanding sugar right before serving.

Notes
