I first put this together on a Saturday when Donald was working from home and needed something fast between meetings. I had a wheel of brie sitting in the fridge from a party the weekend before, a bit of prosciutto, and some pepper jelly Sarah had picked out at the farmers market. Twenty minutes later, Donald was asking me to make it again the next day.

If you love a good quick lunch, you'll probably also want to check out this creamy chicken salad for easy summer lunches, which has become one of our go to picks on warm days when nobody wants to turn on the stove.

This sandwich works for a weekday lunch, a picnic in the park, or even a light dinner on a night when cooking feels like too much. No stove, no oven, just good bread and good ingredients layered together the right way.

Why You Will Like This Brie Prosciutto Sandwich Recipe

Here's why this one earns a spot in your regular lunch rotation.

  • It takes only five minutes from start to finish, no cooking required
  • The brie prosciutto sandwich combo gives you salty, creamy, and sweet in every bite
  • Pepper jelly adds a little kick without being too spicy for kids
  • It travels well, so it's perfect for picnics or packed lunches
  • You only need seven ingredients, most of which keep for a while
  • The hot honey drizzle on top makes it feel special without any extra work

Alex isn't usually a fan of "fancy" sandwiches, but he cleaned his plate the first time I made this. Sarah asked for hers with extra hot honey, which tells me it's a keeper in our house.

Ingredients for This Brie Prosciutto Sandwich

Here's what you'll need to pull this together. I like to lay everything out on the counter first so assembly goes fast.

  • 1 fresh sourdough loaf
  • 12 slices prosciutto
  • 1 wheel brie cheese
  • 1 cup romaine lettuce, sliced
  • 1 heirloom tomato
  • 4 tablespoons pepper jelly
  • 4 tablespoons hot honey

A few notes from my own kitchen. If you can't find heirloom tomatoes, any ripe tomato works fine. I've also swapped romaine for arugula when that's what I had on hand, and honestly, it was just as good.

Description

This brie prosciutto sandwich recipe takes about five minutes, uses seven ingredients, and layers creamy brie, salty prosciutto, and sweet pepper jelly with a drizzle of hot honey for the perfect no-cook lunch.

Ingredients

Scale
  • 1 fresh sourdough loaf
  • 12 slices prosciutto
  • 1 wheel brie cheese
  • 1 cup romaine lettuce, sliced
  • 1 heirloom tomato
  • 4 tablespoons pepper jelly
  • 4 tablespoons hot honey

Instructions

  1. Slice the sourdough loaf into two pieces the long way, then slice both pieces in half again so you have a top and bottom for each sandwich.
  2. Pull out a little of the soft center from each piece of bread to keep the sandwich from getting too thick.
  3. Slice the tomato and lettuce, then slice the brie into pieces about half an inch thick.
  4. Spread pepper jelly across the bottom slice of bread.
  5. Add the sliced lettuce on top of the jelly, followed by a slice of tomato.
  6. Layer the brie and prosciutto slices on top of the tomato.
  7. Drizzle hot honey over everything, then close the sandwich with the top slice of bread.
  8. Wrap each sandwich in parchment paper, slice in half, and serve right away or pack for later.

Notes

This sandwich is best eaten right after making it since the bread can soften if it sits too long with the tomato and jelly inside. Leftovers can be wrapped tightly and kept in the fridge for up to two to three days, but skip the microwave since the brie can get an odd texture when reheated. To prep ahead, slice and store the ingredients separately for up to two months, then assemble fresh when ready to eat.

How to Make This Brie Prosciutto Sandwich Recipe

This whole process takes about five minutes once your ingredients are ready. I promise it's easier than it looks.

Prep the Bread and Veggies

Slice your sourdough loaf into two pieces the long way. Then slice both of those pieces in half again so you end up with a top and bottom for each sandwich.

Using your hands, pull out a little of the soft center from each piece of bread. This keeps your sandwich from getting too thick and helps everything stay put once you take a bite.

Slice your tomato and lettuce next. Then slice the brie into pieces about half an inch thick. I find a warm knife works best here since brie can be a little soft and sticky.

Layer the Sandwich

Spread pepper jelly across the bottom slice of bread. Add your sliced lettuce right on top of the jelly, followed by a slice of tomato.

Layer the brie and prosciutto slices on top of the tomato. Drizzle hot honey over everything before you close it up with the top slice of bread.

Wrap each sandwich in parchment paper and slice in half. Serve right away, or wrap it up to take with you for later.

I learned the hard way that if you skip wrapping the sandwich before slicing, the brie tends to squish out the sides. Parchment paper keeps everything neat and makes it so much easier to eat on the go.

Storage and Reheating

This sandwich really is best eaten right after you make it, since the bread can get a little soft if it sits too long with the tomato and jelly inside.

If you do have leftovers, wrap them tightly in plastic wrap and keep them in the fridge for up to two to three days. I wouldn't recommend microwaving this one since the brie can get an odd texture when reheated.

If you want to prep ahead, you can slice and store the ingredients separately in the fridge or freezer for up to two months, then assemble the sandwich fresh when you're ready to eat.

Tips and Variations for Your Brie Prosciutto Sandwich

Here's what I've picked up after making this more times than I can count.

  • Want it a little more filling? Add an extra slice of prosciutto per sandwich
  • Not into pepper jelly? Fig jam works beautifully here too
  • Have you tried toasting the bread first? It adds a nice crunch against the soft brie
  • Skip the hot honey if you're serving this to little ones who don't love spice
  • This sandwich is honestly perfect to wrap up and take to the beach or a picnic

Have you ever noticed how the simplest sandwiches somehow taste the best? That's exactly what happened here. No fancy technique, just good ingredients stacked the right way.

When I want something a little heartier alongside this sandwich, I'll often pull together some garlic butter steak bites for the table, or a side of crunchy bacon broccoli salad to round things out.

Frequently Asked Questions

What type of bread is best for a brie prosciutto sandwich?

A fresh sourdough loaf is my go to choice because it holds up well against the soft brie and juicy tomato without falling apart. A crusty French loaf or ciabatta would work well too if that's what you have.

Can I make brie prosciutto sandwiches ahead of time?

You can prep the ingredients ahead, like slicing the brie, tomato, and lettuce, and storing them separately in the fridge. I wouldn't fully assemble the sandwich too far in advance though, since the bread can soften once it touches the tomato and jelly.

What can I substitute for pepper jelly in this sandwich?

Fig jam is the swap I reach for most when I don't have pepper jelly on hand. A good raspberry preserve or even a spicy mustard can work too, depending on what flavor direction you're going for.

Should a brie prosciutto sandwich be served cold or toasted?

I usually serve this one cold or at room temperature so the brie stays soft and easy to bite into. That said, a light toast on the bread before assembling adds a nice bit of crunch if you want to switch things up.
