  1. Line a baking sheet with parchment paper. Place cookies in a food processor and process until fine crumbs form.
  2. Mix cookie crumbs with softened cream cheese using a silicone spatula until a dough forms.
  3. Roll into balls, about a tablespoon each, and place on the baking sheet. Freeze for at least 15 minutes.
  4. In a heatproof bowl, combine semi-sweet chocolate chips and 6 teaspoons of coconut oil. Microwave on half power for a minute, stir, and continue in thirty-second increments until smooth. Stir in mint extract.
  5. Dip truffle balls into the melted chocolate, letting excess drip off, then return them to the parchment.
  6. In another bowl, melt white chocolate chips with remaining coconut oil. Add food coloring and mix well.
  7. Drizzle green chocolate over the truffles and add sprinkles if desired.
