  • Caramel Apple Cinnamon Rolls

This recipe brings together everything I love about fall baking: apples, cinnamon, and that gooey caramel drizzle. After making these, you'll never look at regular cinnamon rolls the same way again.

Why you’ll love this recipe

  • Easy prep: Simple steps and minimal fuss make these a great weekend baking project.
  • Autumn flavors: Combines the tartness of apples with sweet caramel and warm cinnamon.
  • Customizable: Adjust ingredients to your family's taste—use your favorite apples or add nuts.
  • Amazing aroma: Your kitchen will smell heavenly, trust me.
  • Perfect for gatherings: Ideal for brunches or as a dessert at family dinners.

Ingredients

  • For the Apple Filling:
  • 4 large Honeycrisp apples, peeled and diced
  • ½ cup unsalted butter, room temperature
  • 1 ½ cups packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ¼ cup water
  • ¼ cup cornstarch
  • For the Dough:
  • 4 ¼ cups all-purpose flour
  • 4 ½ teaspoon instant dry yeast
  • 1 teaspoon fine salt
  • 1 cup whole milk
  • ½ cup unsweetened applesauce or 2 large eggs
  • ½ cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • For the Caramel Sauce:
  • 1 cup granulated sugar
  • 6 tablespoon unsalted butter, room temperature
  • ¼ cup heavy whipping cream, room temperature
  • ¼ teaspoon fine salt
  • For the Icing:
  • ¼ cup cream cheese, room temperature
  • ¼ cup unsalted butter, room temperature
  • ¼ cup caramel sauce
  • 2 teaspoon vanilla extract or vanilla bean paste
  • ¼ teaspoon salt
  • 1 ½ cups powdered sugar

Step-by-step instructions

Make the apple filling

  1. Heat a large skillet over medium-high heat and melt ½ cup of butter.
  2. Add diced apples, brown sugar, cinnamon, and salt. Stir occasionally until mixture bubbles.
  3. Whisk water and cornstarch in a small bowl, then add to apple mixture. Cook until apples are soft. Chill filling.

Prepare the dough

  1. Combine flour, yeast, and salt in a large bowl.
  2. Heat milk, applesauce, and butter until warm. Add sugar and mix.
  3. Gradually mix warm liquids into flour mixture until dough is smooth and elastic.
  4. Let dough rest, covered, for 10-20 minutes.

Assemble the rolls

  1. Roll dough into a rectangle. Spread softened butter and apple filling evenly on top.
  2. Roll dough tightly, slice into 12 equal pieces, and place in a greased pan.

Let them rise

  1. If baking the same day, preheat oven to 200 F. Cover rolls with foil and let rise for 30 minutes.
  2. Preheat oven to 350 F. Remove foil, bake for 28-34 minutes until golden brown.

Make the caramel sauce and icing

  1. For caramel, heat sugar in a saucepan until dissolved, add butter, cream, and salt.
  2. For icing, combine cream cheese, butter, caramel sauce, vanilla, salt, and powdered sugar until smooth.

Recipe tips & variations

  • Use your favorite apples, like Granny Smith, for a tangier filling.
  • Add chopped nuts for extra crunch.
  • Want extra gooey rolls? Double the icing recipe!
  • Ever tried adding raisins? It’s a classic addition some love!

Storage & reheating

  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • For longer storage, refrigerate or freeze, but let them return to room temperature before reheating.
  • Reheat in the oven at 300 F for about 10 minutes, or until warmed through.
  • I find letting the flavors settle overnight makes them even better the next day.

FAQs

Can I make these caramel apple cinnamon rolls ahead of time and bake them the next morning?

Absolutely! Prepare the rolls, cover, and refrigerate overnight. Bake them fresh in the morning for a delightful breakfast.

What type of apples work best for the caramel apple filling?

Honeycrisp or Granny Smith apples are my go-tos. They hold up well and offer a nice balance of sweetness and tartness.

How can I tell when the dough for these cinnamon rolls is ready to roll out?

The dough should be elastic yet smooth. If you press it lightly and it springs back, it's good to go!

Can I use store-bought caramel sauce instead of making it from scratch?

Yes! If you're short on time, a store-bought version works. However, making your own is totally worth it for the freshness.
