How To Make Homemade Valentine's Lollipops

Okay, here's where the magic happens. I'm going to walk you through this step by step, and I promise it's easier than it sounds.

Getting Your Molds Ready

First things first – spray those lollipop molds really well with nonstick cooking spray. I learned this the hard way when my first batch stuck like crazy and I had to basically chisel them out. Not fun.

Insert your lollipop sticks into the molds now, before you start cooking the sugar mixture. Once that sugar gets hot, you'll be moving fast and won't have time to fiddle with the sticks.

Bring the mixture to a boil without stirring it anymore. I know it's tempting to keep stirring, but don't! Just let it do its thing. Watch that thermometer climb up to 295 degrees F. This is called the hard crack stage, and it's what makes your lollipops actually hard instead of sticky and gooey.

The first time I made these, I got nervous and took it off the heat at 285 degrees, and they turned out too soft. So trust the thermometer and wait for that 295 degree mark.

Once you hit 295 degrees F, take the pan off the heat and stir in your gelatin dessert. Watch it turn this gorgeous vibrant red! It happens so fast and looks really cool. Alex always wants to be the one to add the gelatin because he loves watching the color change.

Filling Your Molds

Now you need to work quickly because this mixture starts to harden fast. Spoon the hot sugar mixture into your prepared lollipop molds. I use a regular spoon and it works fine, but you could also pour it if you're careful.

If you're adding gold stars or sprinkles, do it right now before the candy hardens. You've got maybe 30 seconds, so have your decorations ready to go. Sarah loves this part and gets so creative with making patterns.

Cooling And Removing

Let your lollipops cool completely. I usually give them about 30 minutes, but sometimes I wait even longer just to be safe. Don't try to pop them out too early or they might crack.

When they're totally cool and hard, carefully remove each lollipop from the mold. They should come out pretty easily if you sprayed the molds well at the beginning.

Wrapping Your Lollipops

These homemade Valentine's lollipops will stay fresh for about 2 weeks if you store them properly. Keep them in an airtight container or leave them wrapped in their treat bags.

Make sure you store them somewhere cool and dry. I learned this when I left a batch near the stove and they got all sticky from the humidity. Not good!

Don't refrigerate these – the moisture in the fridge will make them sticky and soft. Room temperature is perfect.

If you live somewhere really humid, you might want to add a little silica gel packet to your storage container. I don't usually need to do this in our apartment, but it's something to think about if you're having issues.

Instructions

  1. Spray lollipop molds really well with nonstick cooking spray and insert lollipop sticks into the molds.
  2. In a medium saucepan, combine water, sugar, and corn syrup over medium heat.
  3. Stir until sugar dissolves completely and mixture goes from grainy to smooth.
  4. Attach candy thermometer to the side of the pan, making sure tip is in liquid but not touching the bottom.
  5. Bring mixture to a boil without stirring anymore.
  6. Cook until thermometer reaches exactly 295°F (hard crack stage).
  7. Remove pan from heat and stir in gelatin dessert, watching it turn vibrant red.
  8. Working quickly, spoon hot sugar mixture into prepared lollipop molds.
  9. Add gold stars or sprinkles immediately before candy hardens (you have about 30 seconds).
  10. Let lollipops cool completely for about 30 minutes until rock hard.
  11. Carefully remove each lollipop from the mold.
  12. Wrap each lollipop in a clear treat bag and tie with red ribbon.
