Ingredients

  • ½ cup (113 g) unsalted butter
  • ½ cup (100 g) light or dark brown sugar
  • ½ cup (120 ml) unsulphured molasses
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups (345 g) all purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoon ground ginger
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 3 cups (375 g) powdered sugar
  • 2-4 Tablespoons milk
  • 2 Tablespoons light corn syrup
  • ½ teaspoon vanilla extract
  • Decorative candies and sprinkles (as desired)

Step-by-step instructions

  1. Combine butter, brown sugar, and molasses, and beat until creamy and well-combined. Stir in egg and vanilla extract until well-combined.

  2. In a separate bowl, whisk together flour, baking soda, salt, and spices. Gradually add the dry ingredients to the butter mixture until the dough is smooth and cohesive.

  3. Divide the dough into two parts, wrap in plastic wrap, and refrigerate for at least 3 hours or overnight.

  4. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  5. On a floured surface, roll the dough to about ¼” thick and cut out shapes with a cookie cutter.

  6. Place the cookies on the baking sheet, spacing at least 2" apart, and bake for 8-10 minutes. Allow cookies to cool completely before decorating.

  7. For icing, combine powdered sugar, 2 Tablespoons milk, corn syrup, and vanilla extract until combined. Adjust consistency as needed. Transfer to a piping bag and pipe frosting on cookies, decorating with candies as desired.

  8. Allow the frosting to harden before enjoying.
