Our building here in Manhattan has one small shared rooftop grill, and Donald signs up for a Saturday slot like he is booking a dinner reservation. So when our turn comes around, I do not want to fuss.

Here is the thing though. My first summer up there was rough. I kept grilling chicken breasts, and they kept coming out dry and chalky. Alex took one bite last June and called them chicken erasers. Honestly? He was not wrong, and I laughed while feeling a little defeated.

Then I switched to thighs, and everything changed for the better.

Boneless skinless chicken thighs have a bit more fat running through them, which means they stay tender even if you leave them on the grill a minute too long. The seasoning here is nothing fancy. Salt, pepper, onion powder, garlic powder, smoked paprika, and a little cumin. A squeeze of fresh lemon juice at the end wakes the whole thing up.

If you like to plan a day ahead and let the chicken sit in something first, I also keep this grilled chicken dinner with marinade in my rotation for slower Sundays when I actually have time to think about dinner before 5 p.m.

A few notes from my own kitchen. Smoked paprika is the one I would not skip, because it gives the chicken that campfire smell even on a tiny rooftop grill. Sweet paprika works if that is what you have, but the taste comes out milder.

Bottled lemon juice is fine in a pinch. I have used it plenty of times on a Tuesday. Fresh just tastes brighter, and one lemon covers this recipe twice.

If you keep a blend on hand already, my homemade taco seasoning can stand in for the spice mix and takes the chicken in a completely different direction.

Instructions

  1. Add the salt, black pepper, onion powder, garlic powder, smoked paprika, and cumin to a small bowl. Stir with a fork until evenly mixed with no clumps of paprika sitting on top.
  2. Put the chicken thighs in a large bowl and pat them dry with a paper towel. Do not rush this part, because wet chicken steams instead of searing.
  3. Drizzle the olive oil over the thighs and toss until every piece looks coated.
  4. Sprinkle the seasoning mix and the lemon juice over the chicken. Toss again with your hands so the spices reach the folds and the underside of each thigh.
  5. Preheat the grill to medium high heat, right around 400 degrees Fahrenheit. Give it a full five minutes to come up to temperature.
  6. Brush the grates with a light layer of cooking oil, then lay the chicken down in a single layer with a little space between the pieces.
  7. Cook for 5 to 7 minutes per side. Flip once, and only once, because every flip lets heat escape.
  8. Check the thickest thigh with an instant read thermometer. You want 165 degrees Fahrenheit in the center.
  9. Move the chicken to a clean plate and let it rest for 5 minutes before anyone touches it, so the juices settle back into the meat.
