  • ½ cup balsamic vinegar (or another vinegar you like)
  • ¼ cup soy sauce, I use low sodium
  • ¼ cup Worcestershire sauce
  • ⅛ cup lemon juice, fresh if you have it
  • ¾ cup brown sugar, packed
  • 2 teaspoons dried rosemary
  • 2 tablespoons Dijon mustard (spicy brown mustard works too)
  • 1 ½ teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 6 chicken breasts, or about 3.5 pounds of chicken

A quick note on substitutions. If you're out of balsamic, apple cider vinegar works in a pinch. And if Dijon isn't your thing, a spicy brown mustard adds a nice little kick instead.

This is the marinade I go back to more than any other in my kitchen, a simple mix of pantry staples that turns plain chicken into something the whole family fights over.


Ingredients

Instructions

  1. Whisk all the marinade ingredients together in a large bowl, then set aside about ½ cup of it for basting later.
  2. Place the chicken in a large resealable bag, pour the remaining marinade over the top, seal, and massage the bag so every piece gets coated.
  3. Refrigerate for at least 30 minutes, up to 24 hours, though 4 to 6 hours gives the best flavor.
  4. To grill, preheat to medium-high, oil the grates, and cook 5 to 6 minutes per side, basting with the reserved marinade, until it reaches 165°F.
  5. To bake, cook at 400°F for 20 to 25 minutes, basting halfway through, until the chicken reaches 165°F.
  6. Tent the chicken loosely with foil and let it rest at least 5 minutes before slicing.
  7. Optional: simmer the reserved marinade until slightly reduced for a rich sauce to spoon over the chicken.

Notes

Leftovers keep in an airtight container in the fridge for up to 4 days, or freeze cooked chicken for up to 3 months. Avoid marinating past 24 hours, since the acid can start breaking down the texture.

How To Make The Best Chicken Marinade

Mixing The Marinade

Combine all the marinade ingredients in a large mixing bowl and whisk everything together well. Before you add the chicken, set aside about half a cup of the marinade. You'll use this later for basting and it's important not to skip this step, since you don't want raw chicken juice touching the part you're using for sauce.

Place your chicken in a large resealable bag and pour the marinade right over the top. Gently massage the bag so the marinade coats every piece, then seal it tightly.

If you're short on time, poke a few holes in the chicken with a fork first. This helps the marinade soak in faster.

Chill Time
