- 1.5 lbs grass-fed beef stew meat, cut into bite-sized pieces

- 2 large sweet potatoes, peeled and chopped

- 3 large organic carrots, chopped
- 4 cloves garlic, sliced
- 1 large yellow onion, chopped
- 2-3 fresh rosemary stalks
- 2 tablespoon balsamic vinegar
- 1 jar (14.5 oz) diced fire-roasted tomatoes with juice
- 1 cup bone broth
- ½ teaspoon sea salt
- ½ teaspoon black pepper
Step-by-step instructions
- In a small bowl, whisk together flour, oregano, paprika, cayenne, salt, and pepper.
- Dredge beef cubes in the flour mixture.
- Heat half of the oil in a large skillet over medium heat. Brown half of the beef cubes on all sides for about 30 seconds per side, then remove.
- Add remaining oil and repeat with the rest of the beef.
- Transfer the browned meat to the slow cooker.
