So, yesterday Alex came running to me and asked if we could have a "holiday treat" that wasn’t a cookie. A mom's got to improvise, especially when the kids are all about festive colors. That led us to create these fun Christmas Jello Balls — a treat that's as simple as it sounds and as delightful as it looks.   • 1 box (3 oz) Lime Jello
  • 1 box (3 oz) Strawberry Jello
  • 6½ cups sweetened desiccated coconut, divided
  • 1½ cups plain Greek yogurt, divided

Step-by-step instructions

  1. Cover a moveable surface, such as a baking sheet, with parchment paper and set aside.
  2. Get two medium mixing bowls. Put the green Jello in one bowl and the red Jello in the other.
  3. Place ¾ cup plain Greek yogurt into each bowl.
  4. Add 2½ cups desiccated coconut into each bowl.
  5. Stir each bowl with a different utensil until fully combined.
  6. Get two small bowls and place ¾ cup coconut into each one.
  7. Using gloves, roll all the red mixture into balls, 1 tablespoon in size. Roll each ball in a bowl of coconut until fully coated. Place on the prepared pan.
  8. Repeat with the green mixture, using the other bowl of coconut.
  9. Place the balls in the fridge, uncovered, for 4 hours or until set.
