That's when Crockpot French Toast Casserole came to the rescue. This recipe has been my go-to for busy mornings—or honestly, anytime we crave a comforting breakfast without the hassle. With minimal prep the night before, it's practically foolproof and perfect for those hectic days. Plus, the smell of cinnamon wafting through the apartment as it cooks? Absolute perfection. Ingredients

  • 16 ounces loaf sliced brioche bread, cut into 1-2” cubes
  • 6 eggs, beaten
  • 2¼ cups whole milk
  • 1 teaspoon vanilla extract
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • pinch of salt
  • ½ cup light brown sugar
  • ¼ cup unsalted butter, cut into cubes

Step-by-step instructions

  1. Add cubed bread to the bottom of a greased 5-quart or larger slow cooker insert.
  2. Mix the eggs, milk, vanilla, cinnamon, nutmeg, and salt together. Pour over the bread and press the bread down to submerge it into the liquid.
  3. Cover and place the slow cooker insert into the refrigerator to chill for 1 hour, allowing the bread to soak. You can also leave it covered overnight.
  4. Sprinkle the brown sugar evenly across the top of the bread and dot with butter cubes.
  5. Cover the slow cooker and cook on high for 1-2 hours or low for 2-4 hours, until the bread egg mixture is fully cooked.
  6. Serve immediately with maple syrup, fruit compote, or powdered sugar.
