I started testing them back in January, when Donald cut way down on sugar. He told me he didn't mind giving up dessert, but he really missed weekend breakfast. So I kept playing with almond flour batters until one finally came out soft in the middle instead of dense and a little damp.

Here is everything, and I promise the list really is this short. The eggs do the structure work, so use large ones and let them sit out for a few minutes if you have time.

  • 4 large eggs
  • ¼ cup (59ml) sugar free keto maple syrup
  • 1 cup (110g) superfine blanched almond flour
  • 1 teaspoon baking powder

A few notes from my kitchen. Superfine blanched almond flour matters more than anything else here. I used Kirkland superfine, and when I tried a coarser almond meal once the waffles came out gritty and heavy.

Any sugar free maple flavored syrup made with a sugar substitute works fine. I use ChocZero, but I've also made these with a monk fruit syrup and nobody noticed.

Check your baking powder date. Mine was almost a year old one morning and the waffles came out flat and sad. Sarah called them keto crackers, which was fair.

Instructions

  1. Plug in the waffle maker first and let it preheat according to the directions that came with it. Wait for the ready light.
  2. In a medium bowl, whisk the eggs and sugar free maple syrup for a good 30 seconds, until the mixture looks even and pale with no streaks of egg white left behind.
  3. Add the almond flour and baking powder to the same bowl. Mix until no dry pockets remain and the batter is smooth. It will look thinner than regular waffle batter, and that is correct. Do not add extra flour.
  4. Let the bowl sit for 2 minutes while the iron finishes heating. The almond flour drinks up a little moisture and the batter tightens on its own.
  5. Grease the hot waffle maker lightly with cooking spray, even if the plates say nonstick.
  6. Pour the batter into the center and spread it gently if it needs help reaching the edges. I use about 3 to 4 tablespoons per waffle in a mini iron, which gives me 8 waffles.
  7. Close the lid and cook for 2 to 4 minutes, until the outside is golden brown and the waffle lifts away from the plates without a fight. If you have to pry, give it another 30 seconds. Do not open the lid early to peek.
  8. Repeat with the rest of the batter, greasing lightly between every waffle.
  9. Let them cool for a minute so the centers finish setting, then serve warm with butter, a little more sugar free syrup, and berries.

Notes

Superfine blanched almond flour matters more than anything else here. A coarser almond meal makes the waffles gritty and heavy. Check your baking powder date too, because an old tin gives you flat, sad waffles. Any sugar free maple flavored syrup works. Add ½ teaspoon vanilla for a rounder taste, ½ teaspoon cinnamon for a fall version, or a small pinch of salt to make the sweetness read cleaner. Do not overfill the iron, almond flour batter spreads more than you expect. Cool leftovers completely on a rack, then store in an airtight container in the fridge for up to 4 days, or layer with parchment and freeze for up to 2 months. The toaster is the best way to reheat, 2 to 3 minutes straight from frozen.

How To Make Keto Waffles Step By Step

The batter comes together faster than the waffle maker heats up, so I usually plug in the iron first.

Whisk The Eggs And Syrup

In a medium bowl, whisk the eggs and sugar free maple syrup until the mixture looks even and pale.

Give it a good 30 seconds. Any streaks of egg white left behind will show up as rubbery spots later.

Stir In The Almond Flour And Baking Powder

Add the almond flour and baking powder to the same bowl.

Mix until no dry pockets remain and the batter is smooth. It will look thinner than a regular waffle batter, and that is correct. Do not add extra flour to thicken it.

Let the bowl sit for two minutes while the iron heats. The almond flour drinks up a little moisture and the batter tightens slightly on its own.

Heat And Grease The Waffle Maker

The amount depends entirely on your iron. I use a Dash mini waffle maker that turns out waffles about 3.5 inches wide, and 3 to 4 tablespoons per waffle is right for me. That gives me eight waffles from one batch.

Close the lid and cook for 2 to 4 minutes, until the outside is golden brown and the waffle feels set. When it is truly done, it lifts away from the plates without a fight. If you have to pry, give it another 30 seconds.

Repeat with the rest of the batter, greasing lightly between waffles.

Serve Them Warm

Let them cool for a minute so the centers finish setting, then eat them warm. That first minute makes a real difference in texture.

We pile on butter, a little more sugar free syrup, and berries. Alex adds whipped cream and calls it a fair trade for getting out of bed.

Storage And Reheating Tips

Cool the leftovers completely on a rack before they go anywhere. Warm waffles in a sealed container steam themselves soft.

Store them in an airtight container in the fridge for up to 4 days. For longer, stack them with small squares of parchment between each one and freeze for up to 2 months.

The toaster is the best way to bring them back. Two minutes on a medium setting and the edges crisp right up again.

A microwave works when you are in a rush, but the waffle turns soft and floppy. Honestly, I skip it now. The oven at 350F for about 5 minutes is my second choice, especially when I'm reheating a whole batch for the four of us.

One thing I noticed after a few rounds of testing. Day two waffles taste slightly sweeter, since the almond flour settles and the syrup spreads through the crumb. Nobody in my house complains about that.

Now the pitfalls. Do not open the lid early to peek, because the waffle tears straight down the middle. I did that three times before I learned.

Also, do not overfill. Almond flour batter spreads more than you expect and I have scraped enough overflow off my counter to know better.
