- Put both cans of coconut cream in the fridge overnight, or for at least 8 hours, so the thick cream separates from the watery liquid underneath.
- Place the dates in a large bowl and pour in enough hot water to cover them completely.
- Let the dates sit about 10 minutes, until they feel soft and mushy when you press one.
- Reserve ½ cup of the soaking water, then drain the dates.
- Add the drained dates to a food processor and pulse a few times to break them up.
- Pour in ¼ cup of the reserved soaking water and process until smooth, adding more liquid a spoonful at a time if the paste looks thick.
- Set the date paste aside and let it cool completely, since warm paste will curdle the coconut cream.
- Scoop the firm cream off the top of each chilled can and leave the watery part behind, or save it for smoothies.
- Whip the cream in a stand mixer fitted with the whisk attachment on medium high for 2 to 3 minutes, until light and fluffy. Add a tablespoon or two of the reserved coconut liquid if it will not whip.
- Add the cocoa powder, cooled date paste and coconut milk to the bowl, then whip again until the mixture looks thick, smooth and glossy, scraping down the sides once or twice.
